At West Wind Farm in West Virginia, using the rotational grazing protocols, and benefiting from the high quality grasses, we received some very good readings on ratios of Omega 6s to Omega 3s.  In 2007, we sent beef samples from three of our steers to Susan K. Duckett (Ph.D., PAS) at Clemson University’s Pool Agricultural Center for testing.  The results showed ratios of 1.5, 1.6, and 1.4 — of Omega 6s to Omega 3s.  This a is very favorable ratio in comparison to conventional grain-fed beef.
